I had to make a spur of the moment run to Jackson today. All told, the trip took about 4 hours. About halfway in to the trip, I realized that I had left in such a hurry that I forgot to pull something from the freezer for dinner. Oops. By the time I got home, I was so tired that I again forgot to pull something from the freezer. Oops again. Since we are on a "no eating out until we get back from vacation" kick, I had to come up with a plan. Luckily, we don't eat until 9pm or so, so I have some time.
Looking in the freezer, about the only thing I could see that I could cold water thaw was shrimp. I also found the last container of pulled pork and various frozen vegetables.
I have been wanting to try this recipe for grilled shrimp. Normally, I use lemon juice, hot sauce, a little of this and a little of that on my shrimp, but this recipe looks so stinking good! I will let you know how it works out. I will heat up the pulled pork w/ some bbq sauce (which is so not southern, I know. Down here, you sauce your meat as you serve it, not as you cook it). Steam some rice, heat up some frozen vegetables and cut some fruit. I will also toss a batch of brownies in to the oven, just because it has been one of those days.
Update: I know you have all been on the edge of your seat waiting patiently for the update, so here it is. The shrimp was good. really good. I think next time I will sprinkle a little lemon juice on it because really, everything is better with lemon juice.
